Yemitas
Yemitas are traditional Cuban sweet creamy filled candies made from egg yolks. Yemitas originated in Spain and are made throughout many Latin American countries. The Phillipines also have a version of it.
Yemitas are very economical & easy to make. There are two versions. One with a granulated sugar coating and one with a hard caramel coating. The caramel coated one is my favorite.

Ingredients:
5 egg yolks
Lime juice
Lime peel
1 cinnamon stick
1 tsp Vanilla
1 & 1/2 cups sugar
1/2 cup Powdered sugar
Salt
1. Separate the egg yolks from the egg whites. Beat the egg yolks and set aside.
2. Next make the syrup by adding 1 cup sugar and 1/2 cup water to a pot.
3. Add lime peel & cinnamon stick to it.
4. When the water thickens into a syrup remove the peel & cinnamon stick.
5. Add 3-4 drops of Lime juice. Stir.
6. Set aside to cool.
7. Once cooked add the beaten egg yolks into the pot with the syrup.
8. Stir rapidly & cook on a low flame to prevent the egg yolks from scrambling. It will start to thicken quickly. Add the vanilla & pinch of salt. Keep storing.
9. Once your yolks start thickening into a thick pudding remove it from the stove & continue stirring rapidly 10. When it thickens into a thick paste or dough pour it in a plate. Spread it flat with a spoon to cool quicker. Put into the refrigerator for 1 hour.
11. Remove and add 1/2 cup Powers sugar and mix into mixture. Afterward form a large ball with it.
12. Use a spoon or Scooper to form little balls.
13. Roll ball into granulated sugar
14. Put into little cups
Caramel version
1. Add 1/2 cup of sugar and 3-4 Tablespoon of water into a pot. Mix until dissolved.
2. Heat mixture until it turns into a light brown caramel sauce. Remove from the stove.
3. Add a Yemita on a spoon, dip it in the caramel quickly and cover it completely.
4. Remove it and place on Wax or Parchment paper to harden.
5. After a few minutes it will have hardened. Place it in a little cup.
